Many years ago, humans adapted to their environment to survive. The foods they had access to changed based on the season and climate region, so they learned to eat what was fresh and preserved what could be frozen or dried. Some communities are still living according to these ancient practices, where they “respond to - and live in harmony with - the natural elements.” They not only consume in coordination with these patterns of life but also seek to conserve that which exists all around them, stewarding the land — along with the plants and animals that live on it.
